Oh avocados, I love them so much. In our house we always have the struggle of waiting for the avocados to ripen. My mom normally buys a whole bag of avocados so when one becomes ripe, they all do. So we go for weeks with un-ripe avocados and then out of nowhere we have a whole bag of avocados all ready to be eaten in a short time span. One of our favorite things to make is guacamole. Well my family’s “guacamole” is normally just a smashed avocado with season salt, but we love it no matter how simple it is. I thought I would spice (and sweeten) things up a little bit and make a new twist on our classic favorite.
The mango and the corn add a nice sweetness, while the jalapeño provides a spicy kick. I am not very good at handling my spice and normally add too little (according to my sister who loves things spicy); however, it seemed like everyone was happy with this recipe.
Tip 1: if you like your food to be spicy, feel free to add more jalapeño.
Tip 2: to make this recipe easier, I used frozen corn and mango. This way I had less prep work and I knew they would both be sweet.
Tip 3: make sure to mix gently so that you do not mash the beautiful avocado cubes.
- 1 avocado, cubed
- ½ cup mango, diced
- ¼ cup tomato, diced
- 1½ tablespoons red onion, diced
- ¼ cup corn
- 3 teaspoons jalapeño, minced
- In a medium mixing bowl, mix the avocado, mango, tomato, red onion, corn, and jalapeño together.
