School Update
5 more weeks! Only 5 more weeks left of my last in-class semester of grad school! This 5 weeks is composed of 7 exams (including finals), 3 projects (with papers included), 3 papers, and 2 practicals. It is going to be a long few weeks ughhhh. But after this semester is done, I will get a few weeks off for the holidays before clinicals begin.
Another bummer is fall weather has decided to not appear this year? I am not sure what happened this year but it went from being super hot to super cold with no in-between days, I will have to write a strongly worded letter to mother nature to let her know that fall weather is my favorite and I really missed it this year.
On the plus side, this cold weather means that it is soup time! Last year, I posted a recipe for Sweet Potato Soup (which is one of my favorites). This year, I have a remix on the original where I included Butternut Squash to make the soup even more wonderful, hope you enjoy!
Butternut Squash Soup- EASY EASY EASY
One of the best things about this soup, other than the fact that it is delicious, is how EASY it is to make. Chop everything up, put it in a soup pot, bring to a boil, and then let it sit.
- 1 butternut squash, peeled and cubed
- 3 small sweet potatoes, peeled and cubed
- 2 carrots, peeled and cubed
- 3.5 Cups vegetable broth
- 1 Cup water
- 1 can white beans, drained and rinsed
- 1 apple, peeled and cubed
- 1 teaspoon season salt
- 1 teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- Put the butternut squash, sweet potatoes, carrots, broth, water, beans, and apple in a large soup pot. Make sure all of the vegetables are covered with liquid and add more water if necessary. Bring to a roaring boil, cover with lid, let sit for 1-2 hours until the vegetables are fork tender.
- Use an immersion blender to combine the ingredients. If you do not have an immersion blender you can scoop the mixture into a blender in batches.
- Add the season salt, cinnamon, and pumpkin pie spice. Add more seasoning to taste.
