There are few things I love more in the summer time than s’mores. I LOVE s’mores. I even own a t-shirt that says “Offical S’mores Taste-Tester” (courtesy of my family when they went to Hershey Park). So, I thought why not get summer started early and start making s’mores. Well, more specifically, s’mores brownies.
I took my tried and trusted recipe for brownies (from King Arthur Flour) and I turned it upppp. Seriously they are so delicious. They are also super rich so make sure you have a glass of water or milk on hand to wash them down!

Ingredients
Brownies
- 4 eggs
- 1 1/4 cups cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon instant coffee grounds
- 1 tablespoon vanilla extract
- 1 cup unsalted butter
- 2 1/4 cup granulated sugar
- 1 1/2 cups all- purpose flour
- 2 cups white chocolate chips
- 1/4 cup mini marshmallows
Topping
- 1 cup melting chocolate
- 1 tablespoon half and half (or heavy cream)
- 8 large marshmallows cut in half
- 1/2 cup graham crackers broken into small pieces

Brownies
- Preheat the oven to 350 degrees F. Grease and line a 9"x9" pan
- Crack the 4 eggs into a bowl, and beat them at medium speed with the cocoa, salt, baking powder, espresso powder, and vanilla for about 1 minute, or until smooth. You can do this while you're melting your butter (next step)
- In a medium-sized microwave-safe bowl, or in a saucepan set over low heat, melt the butter, then add the sugar and stir to combine. Or simply combine the butter and sugar, and heat, stirring, until the butter is melted. Continue to heat (or microwave) briefly, just until the mixture is hot (about 110°F to 120°F), but not bubbling; it'll become shiny looking as you stir it. Heating the mixture to this point will dissolve more of the sugar, which will help produce a shiny top crust on your brownies
- Add the hot butter/sugar mixture to the egg/cocoa mixture, stirring until smooth.
- Add the flour, chips, and mini marshmallows, stirring until smooth.
- Pour into greased and lined pan
- Bake for around 30 min or until a toothpick comes out clean.
- Turn the oven to broil
- Top the brownies with the large, halved, marshmallows.
- Put the brownies in the oven for about 3 min (or until the tops of the marshmallows are browned but not burnt).
- Allow the brownies to cool for 10 min.
- Drizzle the ganache on top (recipe below).
- Sprinkle the graham cracker bits on top.
- Allow the brownies to completely cool before cutting into them.
Ganache
- Heat the half and half in the microwave until hot (but not boiling). Take out of the microwave and add the chocolate. Allow the chocolate to melt and stir occasionally.
