Cube the sweet potatoes and place them in a bowl. Drizzle over the olive oil and make sure each cube is coated. Add the spices and toss so they are evenly coated. Spread the cubes evenly on the pan trying to make sure that they are not touching.
Cook for 25 minutes total, flipping them over about half way through to prevent burning on one side. If they do not look brown enough, you can leave them in for a few more minutes.
