Summertime Eats
One of my favorite things about summer time is using the grill to cook. My mom hates when I turn on the oven during the summer because it makes the house hotter than necessary, so a few years ago I discovered the wonders of having a grill. However, I have yet to actually start the grill myself. I let my mom or dad know that I want to use the grill, they start it for me, and I come outside with my prepped food on a platter ready to go. Seriously living the dream.
Years ago my mom started making grilled pizza and it became a family favorite. It normally makes my mom mad because it is a a lot of work for one person making 5 mini pizzas for everyone in the family. However, when my mom and I work together it makes it a lot more manageable. Plus, the best thing about homemade pizza is that you can put whatever you want on it!!!
Grilled Veggie Pizza
Prep beforehand:
- chop and cook all of your veggies. I use zucchini, red and yellow bell peppers, and mushrooms.
- slice your fresh mozzarella into thick slices.
- crumble goat cheese.
- either make pizza sauce or buy a jar from the store.
Steps
- Preheat your grill. I put a cast iron grill pan on top of my grill because the flames freak me out.
- Roll out your pizza dough as thin as you can without making holes in it. Brush it with olive oil.
- Grill both sides of the pizza dough, then bring it inside to add the toppings.
- Turn off the grill
- Put down a LIGHT layer of pizza sauce (too much will make it soggy)
- Add mozzarella cheese, then the veggies.
- Put back onto the grill and let the residual heat melt the cheese.
- Bring the pizza back inside and top with the goat cheese
- Drizzle with a balsamic glaze and top with sliced fresh basil.
- Slice and Eat 🙂
