I remember my mom making strawberry soup for my sisters and I growing up. It reminds me of spring and makes my heart so happy. I am not much of a winter weather person so anything that signifies spring makes me sooo happy.
Also, on that same day I made this soup I had a horrible morning. I was standing in the pantry trying to decide on what to eat for breakfast. I finally decided on Life cereal (after a long debate in my head of what to eat). I grabbed the cereal box from the top shelf and realized the box was upside down so I walked out of the pantry and flipped it around. All of the cereal poured to the floor 🙃. SOMEONE OPENED THE CEREAL BOX UPSIDE DOWN. WHO WOULD DO THAT!?! At this point, I had NOT had any coffee and the food my heart desired was all on the floor. I had to sweep it all up and I grumbled to myself the whole time. I ended up eating some Kashi cereal I bought about a year ago when I was trying to be healthy. It was good but it was not the same.
But for lunch I had strawberry soup so my life got so much better.
Side note: my boyfriend got upset that I called this soup. He thought I should put soup in quotes since it is deceiving. It’s basically a smoothie you eat with a spoon. Turns out it’s technically called a smoothie bowl, who knew!? Probably everyone else except me haha. But I am keeping it as soup because that is how I grew up eating it as.

- 6 cups strawberries, sliced
- 1/2 cup vanilla greek yogurt
- 3 tablespoons honey (plus more for drizzling on top)
Ingredients

- Put all of the ingredients in a blender. Blend until smooth.
