The Move and The Mess
Things have been pretty crazy around the house recently. My parents have been discussing for years about downsizing the house and this last year they started getting more serious about it. I am not a huge fan of moving because change really stresses me out so I told my parents to not get me involved until they get very serious about a house. About 5 weeks ago they told me I should come to the open house and that is when I knew they were serious about the move. Flash forward to now and our house is a mess and the closing is in a week. Everything we own is half packed up because my parents are planning on living out of both houses until we sell this one. I spent my whole Saturday trying to clean out my room. I never realized how much stuff I own until I tried putting it in boxes. Although it is a lot of work going through everything I own, it is very cathartic to start removing things from my life which are no longer necessary. I am discovering so many things I have saved from elementary school and middle school that are of no use to me now. It feels good to just let those things go so I have more space for the future. One big downside is only having half of the kitchen supplies. Cooking has become quite the struggle. Anytime I cannot find something my mom tells me that she probably put it in a box somewhere. But despite the struggle, this girl still gotta eat. Here is a wonderful recipe for some roasted sweet potatoes that I like to bring to school with me for lunch.
How to Make The Sweet Potatoes
Step 1: cube two sweet potatoes. Only about half of my “cubes” are actual cube shapes but it’s all cool. In my defense, sweet potatoes are wonky shapes so it is hard to cut them symmetrically and they will taste delicious no matter what.
Step 2: add the olive oil and the delicious spices.
Step 3: roast in the oven. This is my second favorite part (first favorite is actually eating the food). It’s my second favorite because the whole house starts to smell delicious. My sister’s friend was over when I was making these and I heard her ask Kirsten “is someone making an apple pie? it smells wonderful”. Well no pie here…but don’t be sad because these little cubes are just as delicious! (and nutritious!)
Step 4: EAT
- 2 Sweet potatoes (medium-sized, cubed)
- ⅓ cup olive oil
- ½ tablespoon cinnamon
- ¼ teaspoon nutmeg
- Preheat the oven to 375°F
- Cube the sweet potatoes and place them in a bowl. Drizzle over the olive oil and make sure each cube is coated. Add the spices and toss so they are evenly coated. Spread the cubes evenly on the pan trying to make sure that they are not touching.
- Cook for 25 minutes total, flipping them over about half way through to prevent burning on one side. If they do not look brown enough, you can leave them in for a few more minutes.
