Pesto Season
Hmm, what is that you say?? Pesto season isn’t a real season? What!? Doesn’t everyone know that it goes Winter…Spring…Pesto Season! I guess I made that one up, but seriously it’s a great time of year when the basil starts bursting through the garden. Even if you don’t like making your own pesto, it is still delicious if you get it from a store. And if you are interested in making your own pesto and have not tried before, you totally should because it is super simple. Now onto the recipe that you came here for.
Walnut Pesto Toast
The other day I was in the kitchen with Kirst and we made pesto. I put it on some Naan bread (because YUM) and then put fresh mozzarella on top (double YUM!). When it came out of the oven I decided that it wasn’t enough, something was missing. So I toasted some walnuts and threw those on top and drizzled some balsamic glaze. Seriously so delicious that I made it again the next night with my left over pesto.
The recipe itself is super simple but it is a fun combination that I wanted to share in case anyone else wants to up their pesto toast game.
Notes
- The recipe I wrote out below is for 1 toast; however, it would be super easy to make it for more than 1. Just multiple the ingredients by however many you wish to make
- When toasting your walnuts be VERY careful because it is super easy to burn them. Only leave them in the oven for a few minutes.
- If you don’t have Naan bread you can replace that with whatever bread you want
- 1 Slice Naan bread
- 1 Tablespoon pesto
- 2 Slices fresh mozzarella cheese
- 2 Tablespoons chopped walnuts, lightly toasted
- Balsamic glaze
- Preheat your oven to 400°F
- Spread the pesto on the Naan bread. Place the cheese on top. Put into the oven until the cheese has melted (about 8 minutes).
- Put the walnuts and balsamic glaze on top
