My mom likes to tease me that I always hoard the bananas that have gotten too ripe. I hide them somewhere in the kitchen so that they do not get thrown away and claim I am going to make banana bread. It’s normally about a 50/50 chance that I am actually going to follow through and make them, so I understand why my mom likes to tease me. But the annoying thing about banana bread is that you have to get a cutting board out and cut a slice before eating anything. Now that means you have more dishes to do! So my solution was to just turn my banana bread recipe into some muffins, so here we are. Delicious and easy banana nut muffins!

- 1 1/2 cups all- purpose flour
- 1/2 teaspoon baking soda
- 1/2 cup butter softened
- 1 cup granulated sugar
- 2 eggs
- 3 bananas, mashed
- 1/2 teaspoon vanilla extract
- 3/4 cup walnuts chopped
Ingredients

- Preheat the oven to 350 degrees Fahrenheit
- In a medium bowl, sift together the flour and baking soda.
- In another bowl, cream the butter and sugar. Add the eggs, one at a time. Mix in the mashed bananas, the vanilla extract, and the walnuts.
- Add the dry ingredients to the wet ingredients, mix until just combined (do NOT over mix!)
- Spoon batter into a greased muffin tin
- Bake for 35 minutes, or until a toothpick comes out clean.
